Sambusas, or Samosa, as they are also known, is a serious comfort food for me because I associate memories of community and family with them. In my world, we usually eat Sambsua during festive occasions or during the month of Ramadan, during the evening Iftar meal. Here is are some easy instructions on how to make them:Â
Ingredients:
- 1 package of spring roll or samosa pastry sheets (you can find these in the freezer section of most grocery stores)
- 1 lb ground beef, chicken, or lamb (cooked and seasoned to your preference)
- 1 onion, finely chopped
- 2-3 cloves of garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- Salt and pepper to taste
- Oil for frying
Instructions:
- In a pan, heat some oil over medium heat. Add the chopped onion and minced garlic, and cook until softened.
- Add the ground meat to the pan and cook until browned, breaking it up with a spoon as it cooks.
- Stir in the ground cumin, ground coriander, salt, and pepper. Cook for another minute or two to let the flavors meld together. Taste and adjust seasoning if needed.
- Remove the mixture from heat and let it cool slightly.
- Take one sheet of pastry and place it on a clean surface. Spoon a small amount of the meat mixture onto one corner of the pastry sheet.
- Fold the pastry over the filling to form a triangle, then continue folding in a triangular shape until you reach the end of the pastry sheet. Use a little water to seal the edges if needed.
- Repeat with the remaining pastry sheets and filling.
- Heat oil in a deep frying pan or pot over medium-high heat. Carefully add the sambusas to the hot oil, a few at a time, and fry until golden brown and crispy, about 3-4 minutes per side.
- Remove the sambusas from the oil and drain on paper towels.
- Serve hot with your favorite dipping sauce or chutney. Enjoy your homemade sambusas!
